Supreme bottled cocktails for the sweetest tooth

Creator of the Bubble O Bill Old Fashioned, Joshua Reynolds, has created a new range of bespoke cocktails for The Dolphin in Surry Hills and they sound supreme.

Reynolds’ brief was to create liquid desserts.

He said, “The concept behind these four bottled cocktails was to take the drinker to a place they would’ve never been before. Just think, drinking liquid pavlova, Christmas pudding, carrot cake and chocolate, all the while being laced with delicious, top shelf spirits that really speak to the idea of what the cocktail actually is.”

There are four cocktails for your Christmas cabinet:

Chocolate Negroni Beautiful cacao notes on the nose, silky smooth, decadent chocolate finish.

Carrot Cake Negroni – Warming Christmas spices right through the entirety of the cocktail, like drinking a carrot cake.

Pavlova Punch – Unctuous texture coming from the clarified cream and the meringue washed pisco, big tropical back drops of passionfruit and strawberry. Enriched also by the mango, making this cocktail a real winner.

Xmas Pudding Old Fashioned – Toasty, buttery, whisky heavy style of cocktail, staying true to the flavour profile of the Christmas pudding. The nightcap of all nightcaps.

There is plenty of science behind the beauty. Reynolds says the techniques range from ““There are some cream washing (a technique dating back to the 1600’s, originally done with milk but cream does the same job), freeze washing spirits like the meringue into the pisco then clarifying that drip by drip through fine mesh, fat washing butter with cognac by browning off the butter and infusing it into cognac then freezing and clarifying that, using actual carrot cakes and infusing the classic recipe of a negroni for 72hrs”.
