JACOB – a sparkling winemaker’s dream

One of Australia’s most trusted sparkling winemakers, Trina Smith, has realised a dream, debuting JACOB, a premium vintage Australian Sparkling wine that punches above its weight in complexity and elegance at an exceptional price-point. 

On lees for 32 months, with the grapes sourced from a coterie of Trina’s most prized premium grape growers from South Australia (namely the Adelaide Hills), JACOB is bottle fermented and comprises the trinity of traditional Champagne varieties Pinot Noir, Chardonnay and Pinot Meunier.  

Launching with the 2017 vintage, only the best parcels of fruit were gently pressed to allow for a cool primary fermentation, before malolactic fermentation occurred to soften the palate and add complexity.  The individual base wines were then assessed, blended and prepared for secondary fermentation. Extended maturation of up to 32 months on lees allowed for the complex and distinctive brioche and nougat characters to develop.

Boasting flavours of baked apple, nougat and a refreshing acidity balanced with bready complex aromas and a lasting finish, JACOB is made to be enjoyed as an aperitif or with a great selection of food, particularly seafood such as shucked oysters, BBQ scallops or calamari.
