A collaboration between a premium Western Australian winery, Singlefile and a multi-award-winning Perth distillery, Spirit of Little Things, was to create a spirit that showcases the premium grapes from the Denmark wine region balanced with the native Australian botanicals found in Spirit of Little Things’ classic gins.
The end result is a unique pair of wine grape gins with bold flavours and regional expression.
The Chardonnay Gin is a classic dry-style gin, blended with fresh stone fruit, piney juniper notes, and a hint of vanilla. Enriched with Singlefile Chardonnay grapes, the gin exhibits earthy fruit notes reminiscent of the winery’s celebrated Denmark Chardonnays.
The Pinot Noir Gin is sweeter and made in the “Sloe” style, highlighted by the natural sweetness of the Great Southern Pinot Noir grapes using no added sugar. The result is a jammy, robust gin with pepper notes and a tannin finish. It’s an excellent sipping gin or mixed with dry ginger ale or blended with Vermouth and Campari for a “Pinot Negroni”.
Tom Martin, Head Distiller with Spirit of Little Things, described the collaboration as follows,
“Pat and the entire Singlefile team leant into the process from day one, and using grapes as premium as theirs made the final product that much better. The Chardonnay was the one we really weren’t sure how the concept would go… but amazingly, it’s so well balanced and presents as a really mature gin you could drink every day of the week - it’s not a novelty gin, and it’s one I’m really proud of.”
The venture was a long time in the making, according to Patrick Corbett, Managing Director of Singlefile Wines. "We had been considering creating a gin for some time and had even started cultivating a botanical garden at the Singlefile cellar door. When Tom, a long-standing Singlefile wine club member and Head Distiller with Spirit of Little Things, expressed interest in making a gin from our Chardonnay grapes, we felt the timing was perfect to explore a collaboration,” he said.
