Inspired by Bambino in Paris, Bar Sway in Berlin and LA’s Gold Line Bar is Sydney’s new Busby’s Wine & Record Bar

The brainchild of Sydney hospitality personalities Clayton Wells, Ed Loveday and the Maybe Sammy team is Paddington’s newest bar, Busby’s.

Busby’s is a natural wine and record bar by the hospitality group, Public and opens at the street level of Paddington’s Oxford House on Thursday, 2 November. 

With an ever-evolving wine by the glass list curated by Mike Bennie of P&V Merchants featuring examples from Australian, French and Italian producers and a cocktail list, created by Maybe Sammy’s Paolo Maffietti, Busby’s has some talent behind its offering.

Wine list highlights include Le Juice Gamay Beaujolais, FR, and Chateau Acid Chardonnay Central Highlands, NSW, while the minimalist cocktail list features just five signature cocktails with a focus on flavours and origins of ingredients.

“Created Aperitivo style and crafted in 3-4 steps, the cocktail list at Busby’s reflects our minimalist and no-nonsense approach. As a natural wine and Hi-Fi bar, we focus on flavour and origin of ingredients, and our cocktails embody Busby’s cool, laid-back feel,” says Stefano Catino, Director of Hospitality, Public. 

Though drinks-led, the bar menu is curated by one of Australia’s most lauded chefs – Creative Culinary Director, Clayton Wells (ex-Automata). The share-plate style menu changes with the seasons and skews modern Australian in its ingredients.

Busby’s bevvy of hospitality experts also extends to their front-of-house team, including Venue Manager Beatrice Innocenti (formerly A’Mare, Bistecca) and PUBLIC’s recently appointed Head of Wine Harriot Berry (formerly Saint Peter and LoFi Wines).

Taking inspiration from Bambino in Paris, Bar Sway in Berlin and LA’s Gold Line Bar, there’s a world-class cultural program in residence at Busby’s, featuring diverse selections from some of the finest artists in Sydney. Expect a 5-hour residency every Thursday evening from launch with Jonti (Stones Throw Records), alongside regular sessions with iconic selectors The Santamaria Brothers and ex-Secret Sundaze London resident Millie on Fridays. Saturdays are devoted to playing some of the world’s greatest albums on vinyl from start to finish.

Busby’s is located within Public’s first lifestyle hotel, Oxford House, at 21 Oxford St, Paddington. It joins the portfolio of new concepts from the group with 20+ properties across New South Wales and Victoria.

The venue will open from Monday-Saturday 5 pm-11 pm
