Four Pillars has officially opened the doors to its own, brand new distillery in the Yarra Valley. The distillery has been opened to help meet growing demand for the gin, first launched through crowd-funding in December 2013.

Bar The new bar at Four Pillars Distillery

A former timber yard, the Four Pillars Distillery spans across 700 square metres and features Four Pillars’ two German sister-stills, Jude (600L) and Eileen (50L). The stills will increase production capacity for Four Pillars and will also allow the brand to make a number of experimental and limited edition gins through the year.

The distillery also includes a hospitality space that will bring consumers face-to-face with the world of gin. Located at the Distillery Door, visitors will be able to sample and buy all five Four Pillars Gins, as well as build their own Negronis and Scotty’s Ginger Mules, alongside G&Ts, beers, wines and snacks at the bar.

Also installed at the Four Pillars Distillery, is a Hoshizaki ice machine, which the team says it will be using to shake up some new gin cocktails this summer and beyond.

Scott Gauld will be managing the Distillery Door, open Thursdays-Mondays 10.30-5.30pm, while distiller Cameron Mackenzie will be hosting tours and masterclasses. www.fourpillarsgin.com.au
